A favorite food in Israel Latkes Published: 11/21/04 Ingredients 1. 4 large potatoes, peeled 2. 1 medium onion 3. 2 large eggs 4. 1 1/2 tsp. salt 5. 1/4 tsp. white pepper 6. 2 tbsp. all-purpose white flour or matzo meal 7. 3/4 tsp. baking powder 8. Vegetable oil for frying (at least 1 cup; peanut oil works best) Steps Coarsely grate potatoes and onion in a food processor, or by using the large holes of a grater. In a colander, squeeze the grated mixture to press out as much liquid as possible. In a large bowl, combine the potato/onion mixture, eggs, salt, pepper, flour or matzo meal, and baking powder. Heat about an inch of oil in a 12-inch skillet. When the oil is bubbling, gently drop about 2 tablesthingys of the potato mixture into the pan. (The mixture should hold a round shape.) Gently flatten each latke with the back of a sthingy. Fry over medium heat for about 3 or 4 minutes on each side, or until the latkes are golden brown and crisp. Use two pancake turners when flipping latkes so the oil doesn't splatter. Drain cooked latkes on paper towels and set them aside in a warm oven. Add more oil to the pan as needed for frying the rest of the pancakes. Serve them hot with applesauce, sour cream, jam or sugar. Sorry I have not had time to put as much on this country co-op as usual. I hope the kids in GS group will have done research on their own. Adventure Club is tomorrow at 2:00.
