Classic Cooked Egg Nog 6 eggs • 1/4 cup sugar • 1/4 teasthingy salt, optional • 1 quart milk* divided • 1 teasthingy vanilla • Garnishes or Stir-Ins, optional In large saucepan, beat together eggs, sugar and salt, if desired. Stir in 2 cups of the milk. Cook over low heat, stirring constantly, until mixture is thick enough to coat a metal sthingy with a thin film and reaches at least 160°F. Remove from heat. Stir in remaining 2 cups milk and vanilla. Cover and refrigerate until thoroughly chilled, several hours or overnight. Just before serving, pour into bowl or pitcher. Garnish or add stir-ins, if desired. Serve immediately. *For faster preparation heat milk until very warm before stirring milk into eggs and sugar. MICROWAVE: In 2-quart liquid measure or bowl, beat together eggs, sugar and salt, if desired, until thoroughly blended. Set aside. In l -quart liquid measure or bowl, cook 2 cups of the milk on full power until bubbles form at edges, about 5 to 6 minutes. Stir into egg mixture. Cook on 50% power until mixture is thick enough to coat a metal sthingy with a thin film and reaches at least 160°F, about 5 to 6 minutes. Stir in remaining 2 cups milk and vanilla. Basic Non-alcoholic Eggnog 12 eggs 1 1/2 cups sugar 1 quart cream to taste vanilla dash of nutmeg Seperate eggs at room temp. Beat yolks till creamed with about half of sugar, whites till peaked then add other half of sugar. Beat cream till stiff. Then fold all together. Add vanilla to taste - but remember that a little bit of vanilla goes a long way. Place into containers keep in refrigerator for at least one day. Shake before serving. Wassail - 2 Recipes all the recipes Spiced Cider Wassail INGREDIENTS 1 gallon apple cider 1 tsp ground cloves ] 1 tsp ground allspice 1 tsp ground nutmeg 1 tsp ground cinnamon 1 6-oz can of frozen lemonade, thawed 1 6-oz can frozen orange juice, thawed 1/2 cup firmly packed brown sugar DIRECTIONS Combine 2 cups apple cider and spices in a large pan. Plum Pudding The famous plum pudding like the one Mr's Cratchit makes to crown the Cratchit Christmas dinner was not made of plums, but raisins. In a large bowl, mix the eggs, sugar, spices, and salt in the milk. Stir in the fruit, nuts, bread crumbs, and suet. Then stir in the dissolved baking soda. Then add in the flour. Boil or steam for 4 hours. To flame pudding, warm 1/4 cup of brandy. Make a small depression in the top of the pudding and pour brandy over it. Light with a match. SARAH'S BEST HOMEMADE HOT CHOCOLATE 1 tbsp. cocoa powder 2 tbsp. sugar 2 tbsp. water 1 c. milk a bit of vanilla, if desired Combine cocoa, sugar, and water in a small saucepan. Heat it on low heat, stirring occasionally to prevent the paste from sticking to the pan. After about 1 to 2 minutes, add milk and vanilla. APPLE SAUCE CAKE 2 c. sugar 3 c. cake flour 2 tsp. baking soda 1 box seedless raisins 2 c. chopped nuts 2 c. apple sauce 1/2 c. butter 1 tsp. cloves 1 tsp. allspice 1 tsp. cinnamon 1 tsp. nutmeg 1 tsp. vanilla ICING: 1 box confectioner's sugar 1/2 lb. butter 3 tbsp. wine or coffee 1 tsp. vanilla Mix all dry ingredients well. Add raisins and nuts, mixing well. Add butter, apple sauce and vanilla. Mix well. Bake in greased round cake pans. Bake at 350 degrees until done.
